Servings: 4

Ingredients

50g of butter

3 leeks

1 thyme sprig

100 grams of button mushrooms

20 grams of dried porcini mushrooms

1 pound of lean beef

30 grams of flour

3 tablespoons White wine (optional use)

100ml of double cream

1/2 of lemon juice

Pie-pastry (1 quantity)

Directions

Wash and ensure the leeks are finely sliced.

Crumble the porcini mushrooms

Cut the lean beef into chunks

Slice up the button mushrooms

Place a shallow pan over low to medium heat and heat up the butter.

Gently cook the leeks with the sprig thyme in the butter for eight minutes.

Add up the mushrooms and cook for five minutes more.

Increase the intensity of the heat a little, add the beef chunks and stir till the beef browns up a bit.

Scatter the flour over the mix, stir till a paste forms up and cook for two extra minutes.

Now, splash in some of the white wine if you chose to include the white wine.

Stir and pour in the lemon juice and cream.

Season and simmer for ten minutes till the beef is well cooked.

After this ten minutes of simmering, leave to cool.

Refrigerate to cool up further.

Decorate the top with any trimmings if you so desire.
